Vegan Brown Butter Chocolate Chip Cookies

Ingredients

Brown Butter

  • ½ cup Violife butter

  • ¼ cup Violife butter

Dry

  • 1 ½ cup all-purpose flour

  • ½ cup almond flour

  • 1 tsp baking soda

  • ½ tsp salt

Wet

  • ¼ cup aquafaba

  • 1 cup brown sugar

  • 2 tsp vanilla extract

  • Brown butter from above

Add-ins

  • 1 cup chocolate chips
  • ½ cup chopped chocolate

  • ½ cup chopped walnuts

Instructions

Make the brown butter

  1. Melt ½ cup Violife butter over medium-high heat.

  2. Once melted, continuously stir to prevent burning and bring to a boil.

  3. After around 5 minutes the butter will stop boiling. Continue cooking for about 5 more minutes.

  4. Remove from heat, and add the additional ¼ cup Violife butter. This cool butter will melt in the browned butter, and help cool it down.

Make the cookies

  1. Preheat the oven to 350°F.

  2. Mix the dry ingredients in a large bowl: all-purpose flour, almond flour, baking soda, and salt.

  3. Add the aquafaba to a stand mixer and start mixing on high.

  4. As the aquafaba mixes, slowly add the rest of the wet ingredients: brown sugar, vanilla extract, and our brown butter.

  5. Once the wet ingredients are well combined and whipped close to stiff peaks, fold them into the dry ingredients. Be careful not to lose air from whipping.

  6. Fold in the chocolate chips and any other additional add-ins.

  7. Bake at 350°F for 12-14 minutes.
